State-of-the-art steam peelers are employed in the canning operation. Tomato paste finishing and
evaporation equipment is Rossi-Catelli, Ing. A. Rossi, and Bertocchi. Paste sterilization is completed
in Fran-Rica flash coolers and aseptic fillers are Fran-Rica. The processing system is a pure system
where absolutely nothing is injected into the process, including steam or water, to produce a premium
tomato paste.
